Our knife handles are meticulously handcrafted right here in-house, using recycled food-grade fish boxes collected through our Scottish Harbour Collection Programme. We take these discarded boxes, wash, shred, and melt them into stunning handles, which are then shaped by hand. Each handle carries a distinct marbling effect, making every knife completely unique.

The Traditional Kurouchi Finish

Our blades are finished with a Kurouchi technique, known as the “blacksmith’s finish.” During the forging process, the blade is exposed to intense heat and flames, causing the surface to oxidize and develop a distinctive black scaly residue. This not only gives the blade its rustic charm but also highlights the traditional Japanese craftsmanship that goes into every knife.
