A traditional Hand forged Japanese Kitchen knife with a round ocean plastic handle made from recycled red fish boxes.
The blade is hand forged in Seiki Japan from Aogami Blue Paper steel, which is high carbon ans has 3 layers. This blade has a Rockwell rating of HRC 65 with a Kurouchi finnish,
In Japanese, kurouchi means “first black” and this finish is also referred to as the “blacksmith’s finish”. The knife will retain the black scaly residue from the forging process which gives it a traditional look with a rustic charm. During the forging process, the knives are exposed to tremendous heat and flames so that the iron on the surface oxidizes and turns black.
The handles are made by us in house from recycled broken fish boxes collected directly through our Scottish Harbour collection programme. The food grade boxes are used in the harbour by fishermen and if broken they are sent to landfill. Each handle is handmade and has a marbling effect unique to each kitchen knife adding character to your kitchen.
