San Mai Blades from Seiki, Gifu Japan
At the heart of our knives lies the hand forged blade from the renowned blacksmiths from city of Seiki, Japan, using high-quality carbon San Mai (3 layers) steel.
The blade has a kurouchi (blacksmiths finish) a black, surface coating from the forging process, giving the knife a traditional, rustic look.
The blade's impressive Rockwell rating of HRC 62 ensures that it maintains its sharp edge, offering unparalleled performance with every cut.
Each blade has the maker's mark engraved along it.
Recycled Handles
Our knife handles are meticulously handcrafted right here in-house, using recycled food-grade fish boxes collected through our Scottish Harbour Collection Programme.
We take these discarded boxes, wash, shred, and melt them into stunning handles, which are then shaped by hand. Each handle carries a distinct marbling effect, making every knife completely unique.
